Sugar-Free Banana & Date Flapjacks

Snacks are always in high demand in our house. After school in particular seems to require about 50 different edibles and dinner is still eaten with gusto. It can be hard to come up with a variety of healthy and free-from snacks, but these flapjacks are always a winner.

The banana and dates offer more than enough sweetness so there’s no need for sugar or syrup and a spoonful of cinnamon gives them a nice hint of spice.

They’re thoroughly enjoyed by all ages and best of all take mere minutes to knock up. Which is very important if you’re making several batches a week!

You will need…

100g oats

1 banana

6.5tbs dairy free spread

16 dates

1 tsp cinnamon

How to…

(Makes 9 pieces)

  1. Preheat the oven to 200°C (180°C fan) and grease a 20cm square ovenproof dish.
  2. Use a hand blender or food processor to blitz the banana, dairy free spread and 12 of the dates.
  3. Mix in the oats then roughly chop the remaining dates and add these. Spread the mixture evenly into the dish.
  4. Bake for 20 minutes then check to see if the flapjacks are golden brown. If not, cook for another 5 minutes. Allow to cool then slice into 9 pieces.
